Energy bites taste like cookie dough but are made from wholesome ingredients. They take 10 minutes, need no oven, and keep in the fridge all week.

No-Bake Oat Energy Bites

Chewy no-bake energy bites made with oats, peanut butter, flax and a few dark chocolate chips. The perfect grab-and-go snack.

Ingredients
  

  • 1 cup rolled oats
  • 1/2 cup natural peanut butter
  • 1/3 cup honey
  • 2 tablespoons ground flaxseed
  • 2 tablespoons chia seeds
  • 1/4 cup mini dark chocolate chips
  • 1 teaspoon vanilla extract
  • Pinch of salt

Method
 

  1. Stir all the ingredients together in a bowl until well combined.
  2. Chill for 20 minutes to make the mixture easier to roll.
  3. Roll into 1-inch balls.
  4. Store in an airtight container in the fridge.

Notes

Storage: Keeps up to 1 week in the fridge or 3 months in the freezer.
Variations: Use almond butter and dried cranberries instead of chocolate. Add 2 tablespoons cocoa powder for a double-chocolate version. Roll in shredded coconut for a pretty finish.
