Warm Baked Cinnamon Apples

Ingredients
  

  • 4 medium apples (Honeycrisp or Gala)
  • 1/3 cup rolled oats
  • 2 tablespoons chopped walnuts or pecans
  • 1 tablespoon maple syrup
  • 1 tablespoon melted butter or coconut oil
  • 1 teaspoon cinnamon
  • Pinch of nutmeg
  • 1/2 cup water

Method
 

  1. Heat the oven to 350°F (175°C).
  2. Core the apples, leaving the bottom intact so they form a cup. Widen the opening with a spoon.
  3. Mix the oats, nuts, maple syrup, butter, cinnamon and nutmeg.
  4. Stuff the filling into the apples and stand them in a small baking dish.
  5. Pour the water into the dish around the apples.
  6. Bake 35 to 45 minutes, until the apples are tender when pierced with a knife.
  7. Serve warm with Greek yogurt or a small scoop of vanilla ice cream.
