Overnight oats are the easiest healthy breakfast you can make. You stir everything together the night before, the oats soften in the fridge, and in the morning you have a creamy, ready-to-eat bowl. This version uses Greek yogurt for protein, chia seeds for fiber and healthy fats, and fresh berries for natural sweetness.

Ingredients
  

  • 1/2 cup old-fashioned rolled oats
  • 1/2 cup milk of choice (dairy, almond, soy or oat)
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon chia seeds
  • 1 teaspoon honey or maple syrup (optional)
  • 1/4 teaspoon vanilla extract
  • Pinch of cinnamon
  • 1/2 cup mixed berries (fresh or frozen)
  • 1 tablespoon chopped walnuts or almonds

Method
 

  1. In a jar or container with a lid, add the oats, milk, yogurt, chia seeds, sweetener, vanilla and cinnamon.
  2. Stir well, making sure no chia seeds are clumped at the bottom.
  3. Top with half the berries, cover and refrigerate at least 6 hours or overnight.
  4. In the morning, stir, add a splash of milk if it is too thick, and top with the remaining berries and nuts.

Notes

Tips and Variations: Apple pie: swap berries for diced apple, add extra cinnamon and a pinch of nutmeg. Peanut butter banana: stir in 1 tablespoon peanut butter and top with sliced banana. Tropical: use coconut milk, mango and a sprinkle of toasted coconut. Overnight oats keep well in the fridge for up to 4 days, so make several jars at once.
