Dark Chocolate Banana “Nice Cream”

Creamy, soft-serve style ice cream made from just frozen bananas and cocoa. No ice cream maker and no added sugar needed.

Ingredients
  

  • 3 ripe bananas peeled, sliced and frozen
  • 2 tablespoons unsweetened cocoa powder
  • 2 to 3 tablespoons milk of choice
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Toppings: chopped dark chocolate, walnuts, sliced strawberries

Method
 

  1. Slice ripe bananas and freeze on a tray for at least 4 hours, until solid.
  2. Add the frozen banana, cocoa, vanilla and salt to a food processor or strong blender.
  3. Blend, scraping down the sides often. At first it will look crumbly, then it suddenly turns smooth and creamy.
  4. Add milk one spoonful at a time only if needed to help it blend.
  5. Serve right away as soft-serve, or freeze 1 hour for a firmer scoop.

Notes

Flavor Ideas: Peanut butter: blend in 1 tablespoon peanut butter. Strawberry: replace cocoa with 1 cup frozen strawberries. Mint chip: add a drop of peppermint extract and fold in chopped dark chocolate.
