Quinoa Power Bowl with Roasted Sweet Potato and Tahini Dressing

Ingredients
  

  • 1 cup dry quinoa rinsed
  • 2 medium sweet potatoes cut into 3/4-inch cubes
  • 1 can (15 oz) chickpeas drained and rinsed
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • Salt and pepper
  • 4 cups kale or mixed greens
  • 1 avocado sliced
  • 2 tablespoons pumpkin seeds
Lemon-Tahini Dressing
  • 1/4 cup tahini
  • 3 tablespoons lemon juice
  • 1 small garlic clove grated
  • 3 to 5 tablespoons warm water
  • Pinch of salt

Method
 

  1. Cook the quinoa according to package directions and let it cool slightly.
  2. Heat the oven to 425°F (220°C). Toss sweet potatoes and chickpeas with oil, paprika, salt and pepper. Roast 25 to 30 minutes, stirring halfway, until the potatoes are tender and caramelized.
  3. Whisk the tahini, lemon juice and garlic, then add warm water a spoonful at a time until pourable.
  4. Build each bowl with greens, quinoa, sweet potatoes and chickpeas. Top with avocado and pumpkin seeds and drizzle with dressing.

Notes

Meal Prep: Store quinoa, roasted vegetables and dressing in separate containers for up to 4 days. Add the avocado just before eating.
